back in 2013 when i decided to leave a job that included a steady paycheck, great benefits and full-time access to a color copier and fully functioning fax machine to join the freelance world, i knew i needed to carve out a space somewhere at home where i could tend to paper work and such without being in the middle of everything else that goes on around here. the obvious place for this seemed to be the guest room. i simply moved in a small dainty writing desk and a couple of rolling file bins along with a magnetic board for my calendar and other inspirational items, i was quite pleased with the results and posted a blog about <a href="http://servingsuggestionsonly.blogspot.com/2013/04/playing-office.html" target="_blank">the progress.</a></div>

well, here we are two years later and i'm loving the freelance world. but with all the various projects (everything from space planning to food styling, to prop styling and set design) the space i'd allowed myself just wasn't working any more. i needed some room to spread out! it seemed to make sense to move my work area to the nook where the bureau was (at a whopping 52" wide, it would more than double the work surface i'd been using up until then) and add a credenza to house the additional storage i so badly needed. enter IKEA, craigslist, some spackling and paint (plus about 12 hours of work!) and the new space is finished. all for less than $300. </div>

well, i finally did it; joined the ranks of the self-employed (freelance stylist) a few weeks ago. this, of course, meant i needed a place at home where i could sort papers and get inspired, so i claimed this little spot in our first floor guest room and thought photos of it might be an appropriate intro to this new venture i'm on.<br />
anyway, work's been coming in pretty regularly so far and i haven't spent much time at the desk until this week. which is when i realized how much i enjoy being surrounded by the kids' artwork and sitting at the beautiful desk that dp picked out for me more than 10 years ago. makes "going to work" any day, a pleasure.<br />

now divide the dough into thirds and pop them in the frig for a bit.<br />

i made this sandwich last week after seeing something similar over at realsimple.com, using mashed white beans, avocado, cucumber and red onions.<br />
but seeing as i had whipped up a batch - i use the phrase "whipped up" pejoratively, because i am impossibly slow in the kitchen. those "30-minute meals"? plan on 90 if i'm the cook - of baba ganoush (using <a href="http://allrecipes.com/recipe/baba-ghanoush-2/" target="_blank">this recipe</a>) a few days earlier, i decided to use that in lieu of the white beans. and boy did i hit on a winner.<br />
<br />
first of all, i feel almost as strongly about the addition of avocado to any dish, as i do bacon. almost. so this sandwich had me from the start. and like i said, i really wanted to find something vegan AND tasty that i could make rather quickly on a busy weekday morning. this definitely qualified.<br />
<br />
it might possibly be improved upon, and certainly variations of it exist, but i'm sticking with the original.<br />

<span class="Apple-style-span" style="color: #191919; font-family: inherit; line-height: 25px;">the process is easy.....melt a stick and a half of butter in your oblong pan (mine was an enameled cast iron 8 x 12). then in a large bowl, put 3 cups flour, 1 T baking powder, 2 cups sugar and 1/2 t salt. whisk these together. in a separate bowl, combine 1 1/2 cups milk, 1 t vanilla and 3 eggs. whisk well then add to dry ingredients, stirring until no lumps remain. pour this batter into your pan with the melted butter (the butter will rise to the top) and then sprinkle on your fruit. it will look something like this:</span><br />

then i opened the jar and we each took a sniff.<br />
what is that??<br />
i told her it contained not only rice, but kefir lime leaves and lemon grass.<br />
but still we couldn't identify that familiar smell.<br />
so i told her to go ask the others.<br />
in less than 90 seconds she was back.<br />

"Fruit Loops! it smells like FRUIT LOOPS!"<br />

2 carrots, peeled and chopped</div>

2 ribs celery, chopped</div>

1 medium onion, chopped</div>

2 bay leaves, fresh or dried</div>

Salt and freshly ground black pepper</div>

1 pound ground beef, pork and veal combined</div>

1 egg, beaten</div>
<div class="p1">
2 cloves garlic, minced</div>

1/2 cup grated Parmigiano-Reggiano or Pecorino Romano</div>

1/2 cup plain bread crumbs</div>

1/2 teaspoon freshly grated or ground nutmeg</div>

Directions</div>

In a deep pot over medium heat add oil, chopped carrots, celery and onions</div>

i was lured into buying a jar (ok, three) of this jam when it was featured on fab.com, one of my favorite websites for daily sales featuring little-known designers and tons of things that are just plain fun (that site alone made stuffing 8 kids' stockings last year a pleasure). sign up now and get started. the stuff doesn't last long.<br />

okay, enough of the shameless promotion of consumerism via fab.com....what this post is really about is even more shameful....BACON IN A JAR. from skillet street food, one of the first food trucks (an airstream trailer, actually) that was started in seattle back in 2007, by cia graduate, josh henderson.<br />

here's how skillet street food describes their product:<br />

anyway, this spread is certainly one of henderson's crowning achievements.<br />

it comes in handy when you're craving the addition of real bacon to a dish but don't have the time to fry some up.<br />

i've used it on peanut butter sandwiches, in scrambled eggs, bean soups, salad dressings and of course, on grilled cheese. and the flavor is so intense, it takes only a dollop to get you where you want to go.<br />
